Sweet Potatoes are Sweet Sensations
When October arrives, I love to walk through the produce section of my favorite grocery store and see vibrant orange and green vegetables filling the bins with the smell and sight of Fall.   One favorite vegetable that I always look forward to having is  the sweet potato because of its rich color and sweet taste.  In fact, sweet potatoes are unique in it is neither a yam nor a potato.  They were first grown in many parts of the world and also in the Southeast U.S.  where they were an easy vegetable to grow.   However, these hearty vegetables are packed with an abundance of Vitamin A, Vitamin C, Vitamin B6 and plenty of dietary fiber.   In fact, one study researched the benefits of sweet potatoes compared to other vegetables and sweet potatoes ranked the highest in nutritional value when comparing fiber content, complex carbohydrates, proteins, vitamin A and C and calcium.

For me I truly love the different dishes that you can make with sweet potaotoes.  My favorite is sweet potato casserole and the combination of brown sugar, marshmellows and walnuts compliment this vegetable so well that I enjoy having it anytime of the year.  Sweet potatoes make a great side dish to any main dish and some creative ways to prepare them include slicing them and deep frying or baking them to make sweet potatoe french fries; sweet potatoe pie and baked sweet potatoes.

Sweet Potato Fries

Ingredients-

2 large sweet potatoes
1 tbsp of olive oil
1/2 tsp salt
1/2 teaspoon ground cumin
1/4 teaspoon ground red pepper

Method-

1- Preheat the oven to 450 degrees.
2- In a small bowl, combine cumin, salt, and pepper. Set aside.
3- Peel potatoes, cut each in half lengthwise, and cut each half into 6 wedges.
4- In a large bowl, combine the cut potatoes, oil, and spice mixture. Toss until potatoes are evenly coated.
5- Bake the fries: On a baking sheet, arrange potatoes in a single layer and place on the middle shelf of the oven. Bake until edges are crisp and potatoes are cooked through -- about 30 minutes.
6- Serve immediately.
