Cheese Ravioli with Shrimp and Tomato Cream Sauce

I really like this recipe becuase it uses a tomato-cream sauce that brings the dish together!

Recipe Ingredients

2 tablespoons butter
1 small garlic clove, crushed1 can (14 ounces) Italian-style peeled plum tomatoes with juices
1 cup heavy cream
8 ounces medium shrimp, shelled, deveined, and coarsely chopped
6 large basil leaves, rinsed, dried and torn into pieces
Salt and freshly ground black pepper
1 pound fresh or frozen cheese-filled ravioli
parmesan cheese

Recipe Steps

1. Heat butter in a medium skillet; add garlic and saute 1 minute
2. Add tomates; cook stirring and breaking up tomatoes with side a spoon, until mixture is slightly reduced and thickened, about 10 minutes
3. Boil cream in a medium saucepan, stirring and adjusting heat to prevent boiling over, until reduced by half. Add to the reduced tomato sauce. Stir in the shrimp; simmer over low heat 5 minutes.
4. Stir in the basil, season with salt and pepper
5. Cook ravioli in plenty of boiling salted water until tender; drain
6. Place ravioli in large pasta serving bowl and spoon sauce over ravioli to coat
7. Serve in indvidual pasta bowls and sprinkle with freshly grated parmesan cheese
