My children love this kid friendly recipe for chicken satay. Before they knew the dish as "chicken satay", they would call it "chicken on a stick". It is a very healthy and flavorful alternative to fried chicken. It is so easy to make that my children often help me make it.

Recipe Ingredients

1 pound of boneless chicken breast
2 heaping tablespoons of nonfat plain yogurt
1 clove of garlic
2 teaspoons of curry powder
sweet red chili sauce

Recipe Steps

Slice chicken breast into 1 inch strips cutting against the grain
In a small bowl, mix the yogurt, garlic and curry powder together till it is thoroughly blended.
Place chicken and yogurt mix in a ziploc bag and close the seal. Mix the marinade into the chicken by squeezing the ziploc bag until the chicken is coated. Refrigerate for 2-4 hours.
Grill over medium heat for about 6-7 minutes and serve with sweet chili sauce as a dip.

Additional Tips

For added zest to this dish, you can use spicy curry powder.

This marinade is also great on shrimp with mango chutney is an ideal accompaniment.
