Great casserole recipe from a friend that my family loves!

Recipe Ingredients

2 cups cooked chicken, cubed
2 tsp lemon juice
1 tbsp soy sauce
1 can (14oz) chinese vegatables
1&1/4 cups water or consumme
1&1/2 cups instant rice
1 can (8oz) water chestnuts drained and chopped
1/4 cup green onion, finely chopped
1 cup celery
1 tsp salt
1/8 tsp pepper
1 cup mayonaisse
1 can (3oz) chow mein noodles

Recipe Steps

1) pre-heat oven to 350 degrees
2) sprinkle chicken with lemon juice and soy sauce and marinate for 30 mins
3) drain liquid (keep) from chinese vegatables and add the water (or consumme) to it to make 1/4 cups liquid
4) combine all ingredients (except chow mein noodles) and mix well
5) turn into greased 9 x 13 pan
6) sprinkle noodles on top, cover with foil(remove foil for last 15 mins) and bake for 40 minutes
