Poached Salmon with Horseradish

This is a quick and easy dish that is very tasty with this wonderful horseradish sauce.

Recipe Ingredients

4 salmon steaks
1 small yellow onion, diced
3 Tbsp water
1 Tbsp lemon juice
1 tsp instant chicken granules (for broth)
Milk
1 Tbsp margarine
4 tsp flour
1 Tbsp chopped chives
2 tsp horseradish
dash of pepper

Recipe Steps

1- in a microwave baking dish, combine water, lemon juice, chicken granules, onion and pepper.
2- arrange salmon steaks on top of liquid mixture and cover loosely
3- cook in microwave on high, 7-9 minutes or until fish flakes, turn dish every 3 minutes, remove fish and keep warm

sauce:
4- strain the poaching liquid and discard the onion
5- measure liquid and add milk to make 1 cup, set aside
6- in a measuring glass, cook butter uncovered on high for 35 seconds, until melted
7- Stir in flour, add milk mixture, and cook uncovered on high for 4-5 minutes until thickened, stirring each minute
8 stir in chives and horseradish and serve on fish
